Impact Mums Veggie Recipe, Tofu with Corn Bread

On this rubric we are going to give you some delicious and easy vegetarian receipts from our Impact Mums, that feed our volunteers every day at Impact House, Lisbon.
 
Here it is the first tasty dish:
 
🥗 Tofu with Corn Bread 🥗
 
Ingredients for marinade:
– 250g of Tofu
– Soy sauce and olive oil for seasoning
– 2 Garlic cloves
– herbes (at your choice)
 
Chop the tofu in squares into a bowl, season them with soy sauce until it turns brown and add a bit of olive oil. Cut the cloves into the bowl add the herbes, mix everything and let it rest for 1-2 hours. 
 
Ingredients:
– 1 veggie portuguese “alheira” or chorizo;
– 1 chopped onion 
– 1 chopped garlic clove
– 2 broccoli chopped into small pieces
– 1 chopped red pepper 
– Olive oil
– Half of a corn bread shattered

Sauté the onion in olive oil, until the onion is golden brown. After that, add the tofu, along with the sauce that served for your seasoning. Then add diced broccoli,, pepper and garlic. Finally, add the alheira or chorizo. Saute for 10 minutes. The resulting mixture must be placed in an oven glass bowl and, above it, you should add the bread and season on top with olive oil. Put in the oven in 180 degrees for 20 minutes et voilá!
